Parsnip Instructions

Soil & Culture

Parsnips require well-drained soils with a pH range of 6.0–6.8. Deep, loose, and fertile sandy loams and peat soils with good moisture-holding capacity grow the straightest and smoothest roots.

Direct Seeding

Sow in early to mid-spring. Plant 1/2" deep in a 2" wide band, spacing seeds about 1" apart (approx. 20 seeds/ft.). Do not allow soil to dry out prior to emergence.

Temperatures

Optimum Germination: Peaks sharply at 68°F (20°C). Seed normally requires up to 3 weeks to germinate.

Plant Spacing

Once established, thin plants to 2–3" apart in rows 18–24" apart. Adjust density depending on if you want smaller packaged roots or larger overall yields.

Harvest & Flavor Profile

Parsnips require a full season of growth. Their sweet flavor is brought on by cold weather. Dig in the fall or leave in the ground through the winter (hilling is recommended for overwintered crops). When harvesting in early spring, dig before the tops begin to regrow for the highest quality roots.

Safety Caution

In rare instances, contact with the foliage can result in a severe rash (phytophotodermatitis). When working with this crop on hot, sunny days, we highly recommend wearing long sleeves and long pants. Wash any exposed skin surfaces as soon as possible after contact.
