Culture & Soil Prep

Jicama requires full sun (8+ hours daily) and rich, sandy loam soil that drains exceptionally well (pH 6.5–7.0). Avoid heavy clay soils, which can cause the tubers to rot or become malformed. Work compost deeply into the bed before planting.

Sowing Method

Indoors (Zones 3-8): Soak seeds in warm water for 24 hours before sowing. Start seeds in pots 8–10 weeks before the last frost. Sow ½" deep and transplant outdoors only when soil is thoroughly warmed.
Outdoors (Zones 9-11): Direct sow seeds ½" deep once soil temperatures reach 70°F.

Temperatures & Germination

Optimum Germination: 75–85°F (24–29°C). Jicama seeds need significant heat to sprout. Use a seedling heat mat if starting indoors. Germination typically takes 10–21 days.

Plant Spacing & Support

Space plants 8–12" apart in rows 2–3' apart. Jicama is a vigorous vine that can reach 10-20 feet long. Provide a sturdy trellis or fence for the vines to climb; this saves garden space and maximizes sunlight exposure.

Pruning for Larger Tubers

Pinch Off Flowers: To encourage the plant to direct its energy into producing large, sweet tubers rather than setting seeds, aggressively pinch or snip off all flowers as soon as they appear during the growing season.

Harvest & Storage

Harvest just before the first frost, or once the foliage begins to die back. Carefully dig up the tubers and brush off the soil. Cure the roots in a warm, dry spot for a few days to toughen the skin. Store unwashed in a cool, dark place (50-60°F) for up to 2 months. Do not refrigerate raw tubers, as they will sustain chill damage.
