Centaurea cyanus - Classic cornflowers in blue, pink, red, and white.
These upright plants produce abundant double and semidouble 1–1 1/2″ blooms that thrive in cool temperatures. Also known as garden cornflower and bachelor’s buttons, they are highly effective when massed for color in beds and borders. Not only are they an excellent cut flower, but their mildly floral petals are also fully edible—perfect for decorating desserts or brightening up a summer salad mix.

Hardiness Zones & Soil
USDA Zones 3–11. Highly adaptable across most US regions as a cool-season annual. Tolerates poor soil of medium fertility, but requires good drainage to thrive.
Sowing Method
Direct Seed (Recommended): Sow thinly in rows (approx. 6 seeds/ft.), 1/4" deep, as soon as soil can be worked. Keep moist until emergence.
Transplant: Sow 3-4 weeks before planting out. Transplant into cell packs or larger containers when the first true leaves appear.
Temperatures
Optimum Germination: 59-68°F (15-20°C). Rates decline rapidly above this range.
Growing Transplants: Grow at 50-55°F (10-12°C) during the night for several weeks to develop a strong root ball.
Plant Spacing
When seedlings have their first true leaves, thin to 6-9" apart.
Harvest & Alternate Uses
Fresh Cut Flowers: Harvest when blooms are 1/4 to 1/2 open.
Dried Flowers: Can be hung to dry, though blooms become quite small once dried.
