Celery Instructions
Hardiness Zones & Soil
USDA Zones 3-10. Celery is a heavy feeder that requires highly fertile, well-draining soil with plenty of organic matter (pH 6.0–7.0). It is grown as a summer/fall crop in cooler zones and a winter crop in Zones 9-10.
Pelleted Seed Care
These seeds are coated (pelleted) for easier handling. Consistent soil moisture is strictly required during germination to break down the pellet. Keep cool and dry prior to planting; use within one year.
Transplanting (Recommended)
Sow indoors 10–12 weeks before transplanting. Sow 1/8" deep in plug trays. When seedlings have 2 true leaves, transfer to 72-cell trays. Transplant outdoors only when weather is warm and settled.
Temperatures
Optimum Germination: 70–77°F (21–25°C). Seedlings emerge in 2-3 weeks.
Growing: Reduce temp to 60–70°F (16–21°C) after emergence.
Plant Spacing
Set plants 6–8" apart in rows 24–36" apart. Irrigate frequently to maintain consistent moisture for optimum flavor and yield.
Prevent Bolting (Crucial)
Exposure to temps below 55°F (13°C) for 10+ days causes premature bolting (flowering). Do not harden off celery plants by lowering temperatures! Instead, harden off by simply reducing water for 7–10 days before transplanting.
Harvest & Storage
Cut stalks before they become pithy (spongy). Remove field heat immediately by dunking plants in cold water. Store at 32°F (0°C) with 98–100% relative humidity for 1–2 months.
Safety Caution
In rare instances, contact with celery foliage can result in a severe skin rash (phytophotodermatitis). When working with this crop on hot, sunny days, we highly recommend wearing long sleeves and long pants. Wash any exposed skin surfaces as soon as possible after contact.
