Water Spinach Instructions
Culture & Climate
Plant outdoors in late spring after all danger of frost has passed. Thrives under warm summer conditions. Prefers full sun to partial shade and extremely rich, consistently moist soil. It can even be grown in boggy areas or hydroponic setups. Provide plenty of nitrogen and water for tender stems.
Optimal Growth: 75–95°F (24–35°C).
Warning: Prolonged exposure to temperatures below 55°F (13°C) will severely stunt growth and cause cold damage.
Sowing Method
Transplanting: Start seeds indoors 3–4 weeks before the last frost. Pro-tip: Soak seeds in warm water for 24 hours prior to sowing to soften the hard seed coat and speed up germination. Plant out after all danger of frost has passed and soil is warm.
Direct Seeding: Sow directly outdoors once soil has reliably warmed to at least 65°F (18°C). Plant seeds 1/2" deep, spaced 4–6" apart in rows 18–24" apart.
Temperatures & Germination
Seed Germination Temp: Ideal soil temperature is 70–85°F (21–29°C) for best germination. Keep the soil consistently wet until seedlings emerge. Germination typically takes 7–14 days.
Insect Pests & Disease
Generally robust and pest-free. Watch out for slugs and snails in damp soil conditions, and occasionally aphids. Ensure adequate air circulation to prevent fungal issues like white rust if grown in dense patches.
Harvest & Storage
Harvest as a "cut-and-come-again" crop. Snip the main stems when they reach 8–12" tall, leaving the bottom 2 inches of the stem to encourage side shoots to regrow. Highly perishable; store wrapped in a damp paper towel in the refrigerator crisper for up to 2–4 days.
