Cauliflower Instructions
Hardiness & Climate
Zones 3–10 (Cool-season biennial). Cauliflower does not perform well in hot weather; the best success is achieved with spring and fall crops. Winter crops are possible in areas where temps rarely drop below 32°F (0°C).
Sowing Method
Transplant (Recommended): Sow in 72-cell plug flats 4–6 weeks before planting out. Transplant outdoors when seedlings are no older than 4–5 weeks (older plants get stressed and perform poorly).
Direct Seed: Sow 3–4 seeds 18" apart, ½" deep, thinning to 1 plant per group.
Temperatures
Optimum Germination: Peaks sharply at 86°F (30°C). Keep soil at least 70°F (21°C) until germination.
Growing: Lower to 60°F (16°C) after emergence. Harden plants by gradually exposing to cold before transplanting.
Plant Spacing
Space plants 18" apart in rows 24–36" apart. Needs well-drained, fertile soil high in organic matter (pH 6.0–7.5).
Blanching (Keeping Heads White)
Sun exposure turns white curds yellow. While this variety features self-blanching wrapper leaves that naturally fold over the head when well-fed, you may still need to assist in hot weather. If the head is exposed, gather the outer leaves and tie them with a rubber band to protect the pristine white color.
Pests & Diseases
Use floating row covers to repel flea beetles and root maggots. For cabbage worms, use Bt. Prevent disease with long crop rotations (no brassicas).

Harvest & Storage
Cut heads when the desired size is obtained, but before the curds become loose or "ricey." Store at 32°F (0°C) and 95–98% relative humidity for 2–3 weeks.
