Culture & Climate
USDA Zones 3–10. Best grown as a cool-season crop in early spring or late summer/fall. It thrives in cooler temperatures and tolerates light frosts exceptionally well (frost actually enhances the sweetness of the purple stems). Avoid planting during the peak of summer, as extreme heat will cause the plant to bolt prematurely and turn bitter. Requires full sun to partial shade and well-drained, fertile soil.
Sowing Method
Direct Seeding (Recommended): Sow seeds outdoors 4-6 weeks before the last spring frost, or in late summer for a fall harvest. Plant seeds 1/4" deep, spaced 1-2 inches apart in rows 12-18 inches apart. Once seedlings are established, thin them to 4-6 inches apart.
Transplanting: Start seeds indoors in cell trays 3-4 weeks before planting out. Do not let seedlings become rootbound. Harden off before transplanting into the garden.
Temperatures & Germination
Optimum 65–77°F (18–25°C). Can germinate as low as 55°F (13°C). Seeds will sprout reliably in cooler soils within 5–10 days. Keep the soil evenly moist during the germination period.
Pests & Diseases
Like most brassicas, watch out for flea beetles, aphids, and cabbage worms. Using floating row covers immediately after seeding or transplanting is a highly effective organic method to protect young plants from early pest pressure.
Harvest & Storage
Harvest the main purple stalk when the first yellow blossoms are in tight buds or just starting to open. Cut the stem cleanly just above the foliage base. This "cut-and-come-again" method encourages the plant to produce numerous side shoots for continuous harvesting. Store unwashed in the refrigerator crisper for up to 2–3 days. Use promptly for best texture.
